Bikaner. Bikaner is famous all over the world for its sweets and namkeen. But there is one sweet which is made only in Bikaner in the whole world. A sweet is made here which is made only in Bikaner city of Rajasthan in the whole world. We are talking about Surshahi Laddu. As its name suggests, it has a royal temperament. Locally it is also called risky laddu. The specialty of this laddu is that people do not chew it but swallow it directly.

Now let us also talk about the temperament of Surshahi Laddu. It is quite soft. So soft that there is no need to chew it. It dissolves as soon as it is placed in the mouth. This laddu is in huge demand in many states of India as well as abroad. From Bikaner, Surshahi Laddu travels to America, London, Africa, Saudi Arabia, Hong Kong.

From royal kitchen to confectionary shop
Radheshyam Aggarwal, businessman of Surshahi Laddu, says that its season lasts for four to five months. It starts coming in the market in March and lasts till October. Does not spoil for about 7 to 10 days. This laddu is available in the market for Rs 140 to Rs 400 per kg. Bikaner is a hot area and the taste of this laddu is cold. There is coolness in the stomach after eating this. It is made of ghee. Due to melting of ghee in summer, this laddu melts as soon as it is placed in the mouth. Earlier this special laddu was made only in the royal kitchens of kings and emperors. Now it has started being made in confectionery shops for common people also.

There is a big risk in this
Aggarwal says that it takes 3 to 4 hours to make these laddus. Laddus are made from sugar, flour, ghee and rose water. But its quantity i.e. the ratio of things mixed in it and the method of preparation should be absolutely precise. Otherwise, if there is some mistake then the laddu will not be good. That’s why local people have also started calling it risky laddu.
